I don’t know about you but the minute the weather gets warmer I start eating more Salads. I love them on their own or as a side to grilled meats (like Honey Lemon Grilled Chicken).
They are perfect for outdoor entertaining and quick lunches. And if you think that salads don’t taste good, I urge you to try this wedge salad.

How to make wedge salad with blue cheese dressing
Cut the lettuce into quarters (make sure to remove the stem) and place each quarter on an individual plate.
Pour over the dressing and top with cooked bacon, crumbled blue cheese and chopped chives.

Now, you can use either store-bought or homemade Blue Cheese Salad Dressing. It is up to you. I prefer the latter option as it’s fresh, without any preservatives or colorants and it only takes minutes to make.

How do you eat a wedge salad
You will need a fork and a knife.
I suggest serving it on a larger plate so there is plenty of room for the salad so you can slice it easily.
How do you wash lettuce for wedge salad?
First, I remove the outer leaves as they tend to be wilted. Then, I rinse the whole head under running water. Make sure the water is cold.
A head of lettuce from your own garden can be dirtier than the shop-bought one so you can also cut into quarters and rinse each wedge separately. Then, simply place them onto a clean kitchen towel in order to remove any excess water.

Tips for making wedge salad
- I do not sprinkle salt over each wedge as the dressing, bacon and blue cheese are salty enough to season this dish. If you prefer this wedge salad on the saltier side, then go ahead and add more salt.
- Iceberg lettuce can be substituted with romaine lettuce.
- I used pancetta in this recipe as it comes ready-cut and all I have to do is cook it. You can use your favorite bacon. If you want to save time, you can also buy cooked bacon.
- Additional add-ons – cherry tomatoes, cooked eggs.

Ingredients
- 1 Head Iceberg Lettuce , see note 1
- 1 cup Blue Cheese Dressing (250ml), see note 2
- 5 ounces Raw Pancetta (150g), see note 3
- ⅓ cup Blue Cheese , crumbled (35g)
- Fresh Chives to your Taste, finely chopped
Instructions
In a skillet/frying pan cook the pancetta until to your liking.
Meanwhile: Remove the outer leaves of lettuce and rinse it under runny water. Cut off the stem and cut the head into quarters.
Transfer them onto individual plates. Pour over some blue cheese dressing and sprinkle with finely chopped chives, crumbled blue cheese and cooked pancetta.
Notes
- Iceberg lettuce can be substituted with romaine lettuce.
- I count with a quarter cup of dressing per person. This is based on my homemade blue cheese dressing recipe. You can use less or more and this will depend on your taste. Also, you can use a store-bought dressing, if you like.
- 5 ounces (150g) of raw pancetta yields about ½ cup cooked pancetta. I used pancetta because it was more convenient. You feel free to use any bacon you like.
- Because you are using blue cheese dressing in this recipe, and because blue cheese has a strong taste, I only used a little. Now you can adjust this to your liking.
- If you decide to use a store-bought dressing and already-cooked bacon, the prep time should not take longer than 4 minutes.
