I just took my absolute favorite soup and made it aLow Carb Keto Zuppa Toscana Soup Recipe!! And guess what? It tastes pretty much the same. Anyone who says the Ketogenic diet is boring has not tried to venture out from basic bunless burgers or meat and veggies. This recipe is a must try! To me this isn’t even a diet, this is a way of life and baby, life is good!

Simple Way to Start the Ketogenic Diet

There are just a few ingredients that needed to be switched out to make this Keto friendly. This is the original Olive Garden Copycat Zuppa Toscana recipe that I mimicked. You can use link sausage or breakfast sausage, it’s totally up to you. When I took the process photos for this dish, I was making a double batch so this will be the reason you see different ingredients amounts in the photos.

Here’s another thing to note about this recipe. I use radishes as a substitute for potatoes. I cannot stand raw radishes. I never, in my life, knew that radishes taste like potatoes when you cook them. The texture is nearly the same! I am a huge fan of cook radishes. Try frying them in oil with salt and pepper too. They are delish!

If you don’t like the idea of radishes in this dish, you could substitute it for cauliflower but it won’t be nearly as good. I promise you that!

Low Carb Keto Zuppa Toscana Soup Recipe Ingredients

  • 1 lb mild Italian sausage
  • 1 bag whole radishes 16 ounces
  • 1 medium onion, diced
  • 2 teaspoons minced garlic
  • 32 ounces chicken or vegetable broth
  • ⅓ cup heavy whipping cream
  • 2 to 3 cups kale leaves

Low Carb Keto Zuppa Toscana Soup Recipe Instructions

  1. Start by cutting the radishes into small chunks as seen in the photos. I used a food processor. The smaller the radishes the quicker it cooks.
  2. Dice the onion.
  3. On medium heat, brown your sausage in the same pot you plan to use for the soup.
  4. After the sausage is completely brown add the broth, onions, and radishes.
  5. Now add the garlic.
  6. Let this cook over medium heat until the radishes have fully cooked and are nice and soft.
  7. Lastly, add the heavy whipping cream and the kale leaves. Be sure to tear the kale leaves into bite-size pieces.
  8. Cook for a few minutes more until the kale leaves are soft.
  9. Serve warm and enjoy!
