This easy Chicken Cordon Bleu Recipe for the crock pot is one of my favorite “busy day” meals. It literally takes minutes to throw these ingredients in a slow cooker, and the end result is a deliciously creamy and cheesy Chicken Cordon Bleu.

It tastes like something I’d buy at a restaurant.

Throw in some veggies for some extra bulk, if you’d like. But I prefer it nice and simple, as is. It’s a perfect, reliable meal to add to my list of Crock Pot Recipes that I know I will make time and time again because it’s so easy and so yummy.

This amazing and easy slow cooker recipe for Chicken Cordon Bleu is the perfect weeknight dinner idea. Creamy and flavorful, it’s hard to believe that it is diet friendly!

Equipment

  • 1 Slow Cooker

Ingredients

  • 4 skinless boneless chicken breasts - around 4oz each
  • 10.75 oz 98% fat free condensed cream of chicken soup - 1 can
  • ½ cup fat free milk
  • 4 slices extra lean ham
  • 1 cup dry bread stuffing mix
  • ½ cup reduced fat blue cheese crumbles

Instructions

  • Mix together the cream of chicken soup and milk in a small bowl. Pour enough of the soup into a slow cooker to cover the bottom.

  • Layer chicken breasts over the sauce.

  • Cover with slices of ham and then ¼ cup blue cheese crumbles.

  • Pour the remaining soup over everything.

  • Sprinkle the stuffing on top, and top with blue cheese crumbles.

  • Cover, and cook on low for 4 to 6 hours, or 2 to 3 hours on high.

    My husband and I loved this recipe. We used fat free feta instead of blue cheese just because it was on sale at Publix. Feta is like blue cheese but less sharp. We will get blue cheese next time though because the fat free feta was tasteless (just wanted to cut more calories and save more money)! This recipe is wonderful and we will definitely make it again.

    I make this recipe but substitute Jarlsberg Lite Cheese slices for the blue cheese and I omit the bread crumbs… IMO bread crumbs only adds calories. I do flatten the breasts so depth is same and cut each breast half in half to make serving easier and within good portions. Delicious. As other’s had said don’t overcook… I find on high only takes 2-3 hours at most.

    When entering this into the recipe builder, the lowest I can get this to is 13 points. I only put in 4 oz of ham.

      Unfortunately, that recipe builder is extremely inaccurate. That’s why I always calculate all the nutritional information based on the ingredients that I use. I never rely on the recipe builder.

    Made this last night and the husband loved it! I substituted swiss cheese for the blue because he will not eat blue cheese (pickiest eater EVER) … but this is going into the archives to make again!

    The chicken was very moist and tender the sauce was extremely salty even though I used the Healthy Request Mushroom Soup. I think I would like it just as well without the ham and the cheese.

    This was soooo good. I don’t love bleu cheese, but it was perfect in this recipe. I will be making this on a regular basis. I used stove top stuffing in the tub.

    I love Cordon Bleu so I’ll definitely try this. What kind of dry bread stuffing–Stove Top Stuffing type mix or the kind in the clear package–I think we have Pepperidge Farms brand here.

      Yes! You can use reduced fat Swiss cheese instead.
